Share your Sprinkle Spectacular Birthday Cake with us

This fun and fluffy bake is perfect for family birthdays. Make sure to always supervise children when baking in the kitchen. Hot ovens and sharp utensils can be dangerous, so ensure an adult is present to help with baking and decorating. 

Ingredients (serves 15-20):

For the cake:

🍰 350g butter, softened

🍰 350g caster sugar

🍰 6 beaten eggs

🍰 350g self-raising flour

🍰 150g sprinkles (keep extra for decorating)

For the icing:

❄️ 150g butter, softened β„️ 300g icing sugar β„️ 1 tsp vanilla extract β„️ 1 tbsp milk

Instructions:

1. Grease 4 x 18cm sandwich tins with greaseproof paper (Or if you only have 2, use 2 at a time).

2. Beat the butter and sugar together until pale and fluffy. Add the eggs, a little at a time, beating well after each addition.

3. Fold in half of the flour using a metal spoon, then fold in the rest and then add the sprinkles.

4. Divide the mixture evenly between the tins. If you only have two tins, ensure you put 1/4 of the mixture in each tin and level the surface.

5. Bake in the oven at 190°C (375°F) gas mark 5 for about 20 minutes until they are well risen and a golden brown colour.

TIP: Place a skewer through the cake, if it comes out clean the cake is cooked. If there is batter on the skewer, it requires more cooking.

6. When the cakes are cooked, turn out onto a wired rack to cool. If you have 2 cake tins, repeat this process again with the remaining mix, which will mean you have four layers.

7. Whilst the cakes cool, create the buttercream by beating the softened butter, icing sugar, vanilla essence, and milk together until you have a pale smooth buttercream.

8. Once the cakes have cooked, cover one of the cake layers with around 1cm of buttercream, and then stack on another cake layer. Repeat this process until you have covered the top layer. You can use any extra buttercream around the outside of the cake to stop it from getting dry.

9. Cover the top of the cake with sprinkles and add some on the sides too.
